Smashed Garlic Potatoes

 1 Bag small potatoes
 3 Garlic cloves (minced)
 4 tbsp Butter or margarine
 ¼ cup Olive oil
 2 Sprigs of Thyme
 Salt (optional for taste)
 Pepper (optional for taste)

Preheat the oven to 450 °F and place a rack in the middle of the oven

In a large pot, bring water to a boil. Salt heavily

Once fork tender, remove potatoes and drain

Place potatoes on a well-greased baking tray

Smash the potatoes with the bottom of a glass

Top with butter, garlic, thyme, salt and pepper

Bake for 30 minutes, until golden brown
